Vegetable Bread Patties


A nourishing breakfast makes a good start to the day. Breakfast means breaking the night's fast ending the long gap in the intake of food since dinner time. Sliced bread is a shortcut in making these quick and easy patties filled with diced vegetables. This can be an important meal in the breakfast.

Ingredients:

4-5 french beans, finely chopped
1 potato, finely chopped
¼ cup peas
1 carrot, finely chopped
¼ ginger piece, finely chopped
1 tsp lemon juice
2 tbsp chopped coriander leaves
1 tsp salt
¼ tsp red chilli powder
¼ tsp jeera
½ tsp garam masala
4 slices bread
2 tsp oil

Method :

Heat oil. Add jeera. When it turns golden brown, add finely chopped beans, peas, carrots and potatoes. Cook covered till done. Occasionally sprinkle water to prevent the vegetables from burning.
Add finely chopped ginger, coriander, salt, red chilli powder and garam masala. Cook for ½ minute on low flame. Remove from fire. Add lemon juice and mix well. Cool the mixture completely.
Cut slices of bread. Dip in water and remove from water immediately.
Squeeze out the water from bread by pressing it carefully, keeping it flat on the palm.
Keep 1 tbsp of prepared vegetable mixture on one side of the wet bread. Cover with the other half of the bread.
Press well to give it the shape of a patty and seal on all sides by pressing.
Deep fry in hot oil to a light brown colour.
As soon as the patty is put in oil, do not touch it with the frying spoon.
Fry 2-3 pieces at a time.
Drain on paper. Serve hot with sauce.
