Hilsa: Scientific name – Tenualosa ilisha

Hilsa is one of the premium fish in Bengalis life. It is the national fish of Bangladesh. It is available in Assam, Orissa, Andhra Pradesh, Gutraj, and Pakistan as well. In Andhra Pradesh it is known as polasa. In Gujarat, it is known as Modenn or palva. Female is known as Modenn and male is palva.

Mustard Hilsa

Hilsa from Kolaghat are especially different in taste. Now-a-days Kolaghat is famous for thermal power station, but from the very beginning it is popular for Hilsa fish. Rupnarayan River flows through Kolaghat and it is connected to Haldi River, which is connected to Bay of Bengal. Hilsa lays egg in river. After that it moves towards sea. During that period fisherman catches the fish. The more it carries through river (sweet water) more becomes the taste. Initially in Kolaghat, 20-25 fishermen used to catch 100 kg fish per head, but today they catch only 25 kg fish per head. Reason is nothing but the pollution of water. Other than Kolaghat, Hilsa of Padma River is very famous worldwide.

Availability: Mainly available in rainy season.

In Bengali families double Hilsa is very auspicious. It is basically an oily fish. There are various ways to prepare this fish i.e. smoked, fried, baked as well as steamed.
