Ingredients required for preparing Lemon Rice
2 Cups cooked rice/ left over rice
1/2 teaspoon Mustard Seed (Sarshe)
1/2 teaspoon Urad Dal
1/2 teaspoon grated ginger
1 teaspoon roasted Chana Dal
2 dry red chilies, broken into pieces
5/8 Curry Leaves
1/2 teaspoon turmeric powder
Juice of 1 Lemon
1 teaspoon White Oil
1 tablespoon chopped coriander leaves (for garnishing)
Salt: to taste
How to make Lemon Rice
In a Microwave safe bowl combine the oil, mustard seeds, urad dal, grated ginger and roasted chana dal and mix them very well and cover them with a Micro Lead. Microwave them in High Temperature for 3 minutes. You can also stir them once in between.
Add the dry red chilies, turmeric powder and curry leaves and mix them well and again Microwave them in High Temperature for another 2 minutes.
Add the cooked or left over rice, lemon juice and salt and again mix them very well. Microwave them for another 2 minutes and serve them hot after garnishing them with chopped coriander leaves.

Cooking time: 7 minutes
